Roasted Celeriac Salad with Pomegranate

Celeriac is a delicious vegetable.

Most people don’t even know what it is. They just walk past it at the grocery store without paying it any attention. I would like to change all that. You must try this roasted warm salad. I promise you won’t be disappointed!



1 celeriac, peeled and diced

Generous amount of olive oil for cooking

6 garlic cloves, chopped

Fresh rosemary, stems discarded (from 4 stems)

Generous amount of course salt

Pepper to taste

1/3 c. pomegranate seeds

1/4 c. Cold pressed lemon infused olive oil



Heat about 5 tbsp. of olive oil in a large skillet.

Add diced celeriac and begin to brown. Add rosemary leaves.

Add chopped garlic and continue growing until celeriac becomes soft and roasted.

Once nicely roasted, place celeriac in a bowl and mix with pomegranate seeds and lemon infused olive oil.
