Roasted Garlic & Thyme Potatoes

Good potato recipes are easy to find.

Awesome potato recipes, not so much.

My family thinks these are awesome.

 

Ingredients

1 bag of small, yellow fleshed potatoes

8 garlic cloves, chopped

1 Tbsp. kosher salt

A pinch of freshly ground pink and black pepper

A bunch of fresh thyme

A generous amount of olive oil to coat the roasting pan

 

Instructions

Preheat oven to 350degrees.

Begin by peeling the potatoes.Yes, I know, a tedious job, but someone’s got to do them and that someone is you. I hate you too….

Parboil the potatoes. That means to put them in a pot, fill it with water until the potatoes are submerged and boil the potatoes until tender. Drain the potatoes.

If you want to ruin a good blow-dry, simply place head over this. Blow dry = 35$ & 1 hour. Electrocuted looking mommy = 0$ & 1 second flat. (Insert swear word here. Repeat just for good measure.)

Generously coat a roasting pan with olive oil.

Place boiled potatoes in roasting dish and season potatoes with chopped garlic, thyme, salt and peppers.

Place in preheated oven and bake for 1 hour to 1 hour and 15 minutes, until golden brown. Toss the potatoes in the olive oil before serving.
