This is a salad of unexpected flavours. Passion fruit is tart and absolutely delicious with kale. It softens the bitterness of the kale beautifully and when combined with hazelnut oil, this salad reaches a whole other level.

2 c. shredded kale
1 c. quinoa, uncooked
1 1/2 c. shredded cabbage mix
1/4 c. dried cranberries
1/4 c. toasted slivered almonds
1 c. snow peas, sliced on the diagonal
1/2 c. shredded carrots
1 shallot, white and green parts thinly sliced
Paper thin shavings of sharp cheddar, optional (I did not use)
FOR THE PASSION FRUIT DRESSING:
1/4 c. Passion fruit juice (I used a passion fruit vinaigrette base preparation that I bought at Epicure in Miami beach)
1/4 c. hazelnut oil
1 tsp. Manuka honey, optional if you don’t want your dressing to be tart
Cook your quinoa and let cool. If you are unsure how to cook quinoa, check out my previous post.
Mix all the salad ingredients together and set aside in a bowl.
If you can’t find toasted slivered almonds, simply place almond slivers on a pan and set heat to medium low. Watch it carefully as it can burn very quickly. Once fragrant, simply flip almonds to toast on other side.
To make the vinaigrette, simply whisk all ingredients together until thick and opaque.
Pour vinaigrette over salad and let sit until kale softens and serve.
