Parsnip Fries

When I came across this recipe for parsnip fries in Bon Appetit magazine, I knew I had to try it. I didn’t have on hand all the ingredients they use, but I improvised with what I had an the outcome was delicious.

Watching my kids gobbling it up made it so amazing!


4 parsnips (1 bag), sliced thin

2 tbsp. olive oil

4 tbsp. apple cider vinegar

2 tbsp. honey

1 tsp. chipotle pepper powder

Coarse sea salt


Preheat oven to 400 degrees.

Place sliced parsnips onto a baking sheet and coat it with olive oil.



Cook until tender, about 30 minutes.

In a small saucepan, heat up apple cider vinegar, honey and chipotle pepper powder for about 4-5 minutes. Pour over parsnip fries to coat. Season with coarse sea salt. Yum!
