This is a simple, easy recipe.
Pan roasted salmon requires the skin. It is better to use a cast iron pan. It is simple and delicious. Serve it with California Dreamin’ Quinoa Salad found on this site.
Salmon Filet, skin on
Olive oil for frying
Course salt, to taste
Pepper, to taste
Preheat oven to 350 degrees.
Heat a heavy duty skillet on high with 2 tbsp. of olive oil. Wait until pan is very hot.
Place salmon fillets, skin side down on pan and brown the skin until almost black. Season with salt and pepper.
Place pan in the oven and continue to cook for about 10 minutes, until the centre is slightly pink. The skin will remain crispy and the salmon will be juicy and tender.
