You could say that I am inspired by my new surroundings.
Florida is such a beautiful place to live and I feel so lucky to be here. Everywhere you go there are fresh juice stands and I’m not talking about apple juice. You name it, they have every combination here…kale, spinach, orange, carrot, broccoli…and all from local farmers. I’m in heaven.
I often hear that organic food is expensive. I think it largely depends on where you go. I live right in back of Whole Foods and I am loving it! Below is a recipe I made with 100% organic ingredients. This recipe is loaded with super fresh ingredients and is packed with healthy vitamins, nutrients and protein.
Here are all the specs:
Preparation time: 12 minutes
Cooking time (optional): 4 minutes
Assembly time: 1 minute
Serves: 12 as appetizers and about 8 for a meal
Total cost for organic meal: 81.76$ for 12 people or 8 depending.
1 lbs super fresh tuna steak, cut into cubes
2 shallots, diced (white parts only)
1 avocado, cubed
1/3 c. diced mango
1 c. diced cucumber
1 c. diced tomato
1/3 c. diced strawberry
1/3 c. baby mung beans
1/4 c. sweat baby corn kernels
1/3 c. chopped cilantro
1/2 lime, zested and juiced
1 package large wonton wrappers
1/3 c. low sodium tamari (or soy sauce)
1 tbsp. roasted sesame seed oil
2 tbsp agave nectar
1/4 tsp. wasabi sauce, optional

Marinate the tuna: place tamari or soy sauce, sesame oil and agave nectar in a large bowl and whisk together with the zest of the lime and the lime juice. Put tuna cubes in the bowl and mix all together. Allow to marinate for 5 minutes in the fridge.
Meanwhile, set oven to bake 400 degrees. Flip over a large muffin tin and spray with cooking spray. Place wonton wrappers snuggly over the outer part of the molds.
Bake for about 4 minutes.
These are delicious!!!!And so elegant to serve!
Carefully remove from tin and allow to cool on counter.
Put all the exotic salad ingredients in the bowl and mix together with the tuna. If you do not want to eat raw fish, you can grill the tuna before mixing it in with the exotic salad ingredients.
