1 eggplant, cut lengthwise
2 tbsp. tahini paste
1 lemon, juiced and zested
2 cloves garlic, mashed
Salt and pepper to taste
Place eggplant slices on a baking tray and roast in the oven at 450 degrees for about 10-15 minutes, until golden brown.
Chop eggplant and place in a bowl. Mix in with all other ingredients.
