Cheaters Chicken

When you have no time, kind of like me these days, you need that go-to recipe that is so easy and delicious.

Best of all, it is healthy!

Serves 4

Prep time: 5 minutes

Cook time: 20 minutes

Ingredients

8 organic, grain fed chicken legs

1 container pineapple salsa (if you can’t find this, recipe is at bottom for a do-it-yourself)

1/2 vidalia onion, diced

3 tbs. garlic, minced

3 tbs. Thai seasoning

Kosher sea salt

Canola oil

 

Instructions

Begin by browning the onion with about 3 tbs. canola oil on med/high heat. Once onion begins to brown, add the garlic. Cook until soft and translucent. Spoon garlic and onion into a bowl and set aside.

Add another 3 tbs. canola oil to the hot pan and begin to brown the chicken legs.

Once the legs are nice and golden, add the pineapple salsa and the reserved onion and garlic mixture. Sprinkle with Thai seasoning. Use more seasoning if you like.

Cover chicken and let cook until fork tender, about 15 minutes.

 

NOTE: If you can’t find fresh pineapple salsa, you can make it!

Simply diced pineapple, tomato, bell pepper, onion, garlic, cilantro, jalapeño pepper. Mix together with salt and pepper.
